# Teh Tarik: What Actually Happens When the Tea Is 'Pulled'

Two metal vessels, one full, one empty. The right hand rises to shoulder
height, the left hand drops to waist level, and a thin thread of amber-coloured
tea falls between them without a single drop spilling. Repeat. Repeat again.
Then the tea is poured into a glass with a finger-thick head of froth.

The part most often misunderstood: **the pulling is a processing step, not a
performance**. The raw ingredients are ordinary — strong black tea, sweetened
condensed milk, sugar. What transforms the drink is what happens while it is
in the air.

## Why it needs to be pulled

Two things happen at once as the tea falls through the air.

**First, air gets in.** The thin stream hitting the liquid surface below
carries fine bubbles into the mixture. That is where the froth comes from —
not an additive, not a raising agent, just air trapped by milk protein.

**Second, milk fat breaks down.** Each pour applies shear force to the
mixture, breaking the fat globules into finer droplets. It is this finer
emulsion that gives teh tarik a creamy mouthfeel that cannot be replicated by
simply stirring.

A study in the *International Journal of Gastronomy and Food Science* (2021)
tested high-shear homogenisation as an alternative method to hand-pulling,
and revealed the same physics: as the fat globules shrink, emulsion stability
increases, dynamic surface tension decreases because protein adsorbs faster
at the water–air interface, and foam drainage slows. Longer-lasting froth is
not a coincidence — it is a by-product of the same process.

The question of **temperature** is easier to understand qualitatively: the
thin stream stretching through the air exposes a large surface area, so the
boiling tea drops to a temperature that can be drunk right away without
needing ice. We did not find any published temperature measurement in any
official source, so do not trust any figure quoted without a reference.

## Its standing as heritage

The Department of National Heritage (Jabatan Warisan Negara) listed **teh
tarik** as item 47 in the National Heritage declaration on 14 February 2009,
under the intangible heritage object category, food (beverage) subcategory.

In December 2024, UNESCO in turn listed the element *Breakfast culture in
Malaysia: dining experience in a multi-ethnic society* on the Representative
List of the Intangible Cultural Heritage of Humanity. Teh tarik is
specifically named in the element's description, alongside nasi lemak and
roti canai. What is inscribed is the breakfast culture — not teh tarik
separately.

## What's next

If you want to judge a glass of teh tarik honestly, don't look at the height
of the pull — look at how long the froth holds before it collapses. Froth
that collapses within seconds means the emulsion never really formed.
